ZUCCHINI
CASSEROLE
1 lb. lean ground beef
1 onion, chopped
2 cloves garlic, minced
2-1/2 c. tomato sauce
3/4 c. red wine
1/4 t. each tarragon, thyme, oregano, allspice
1 c. sliced mushrooms
10 small zucchini
1/2 c. shredded Mozzarella cheese
1/4 c. grated Parmesan cheese
1. Saute beef, onion and garlic until meat is browned. Stir with fork
while cooking so that meat is in bits. Drain off any fat that may accumulate.
2. To meat, add tomato sauce, wine and seasonings. Cover, simmer 45 minutes.
3. Meanwhile, steam zucchini whole 10 minutes or until barely tender.
Cut off ends. Slice lengthwise in halves. Arrange in one layer in baking
dish.
4. Sprinkle with Mozzarella, cover with meat sauce, sprinkle with Parmesan.
Bake at 350 for 30 minutes.
