PINEAPPLE
BRAN MUFFINS
2 c. unprocessed bran
1/4 c. sugar
2-1/4 t. baking soda
1 egg
1/4 c. oil
1/4 c. honey
3 T. instant dry milk powder
1-1/2 c. wholewheat flour
3/4 c. water
1/3 c. drained crushed pineapple
1/3 c. raisins
1. Place bran, sugar, soda, egg, oil and honey in medium mixing bowl.
Mix well. Add dry milk, flour and water. Whip until batter is just mixed.
Do not overmix. Add pineapple and raisins. Mix in thoroughly.
2. Spoon batter into paper-lined muffin cups, filling 3/4 full.
3. Bake at 400 degreee, 15-20 minutes.
