PENNEE
ROBIN'S BOOZE CAKE
Another Pennee Robin delight. I know cake mixes and instant pudding
are not where it's at, but this is unbelieveable and ridiculously easy.
18 oz. yellow cake mix
1 pkg. instant vanilla pudding
4 eggs
1 t. nutmeg
3/4 c. oil
3/4 c. sherry
1. Beat eggs until foamy.
2. Add all other ingredients and
beat until
there are no lumps.
3. Bake in greased and floured tube or Bundt pan 40-50 minutes at 350°.
4. Turn out of pan while still hot and pierce all over with a fork.
5. Spoon glaze over cake while warm.
Glaze
2 c. powdered sugar
1/3 c. liquid (1/2 sherry, 1/2 Bourbon)
(Any flavored wine or liqueur can be substituted for sherry; rum can be
used instead ef Bourbon.)
