RUSSELL'S (FORMERLY SCHLUSSEL) POT ROAST
Irwin, an early Elektra attorney and long-time friend, had one cooking
speciality. This is it.
4 lbs. first cut Jewish brisket
6 onions, sliced
2 potatoes per person
6 beef bouillon cubes or envelopes, dissolved in
1 cup boiling water
1. Preheat oven to 450° .
2. Sprinkle meat with salt, pepper, onion salt on both sides.
3. Brown and sear meat on both sides (about 20 minutes per side) in an
open pan.
4. Add onions and potatoes.
5. Add bouillon cubes dissolved in water, plus an additional cup of water
to cover bottom of pan.
6. Cover with foil or a cover.
7. Roast at 350° for about 3 hours. Baste from time to time.
