GAZPACHO
I've tasted all kinds of Gazpacho in restaurants, etc. This is still
my favorite.
1 clove garlic
1 medium onion, sliced
1 cucumber, sliced
3 tomatoes, peeled
1 green pepper, seeded
4 raw eggs
1/8 t. salt
1/4 t. cayenne pepper
1/4 c. vinegar
1/4 c. olive oil
3/4 c. tomato juice
Garnish: 1 cucumber, diced; 1 onion, chopped; 1 green pepper, chopped;
croutons
1. Puree the first six ingredients in a blender or processor. Mix well
with beaten eggs. Season with salt, cayenne, vinegar, olive oil and tomato
juice. Chill.
2. Serve in individual bowls and pass the garnishes for topping.
