FRESH
MINT CHUTNEY WITH FRUIT
1/3-1/2 well-packed cup washed fresh mint leaves (discard stems)
4 T. lemon juice
2 fresh hot green chilis (use less or more as desired; as substitute,
use 1/2 green pepper, plus 1/2 t. cayenne pepper)
1 medium-sized tart apple, peeled, cored and diced just before blending
1 orange, peeled, seeded, cubed
1 t. salt
Combine all ingredients in the container of an electric blender or processor.
Blend at high speed until you have a smooth paste. This chutney goes well
with most Indian foods.
